For many years, scientists have assumed that hair turns gray over time because some kind of naturally occurring “toxin” interferes with the ability of melanin to saturate the hair with color. (Melanin is a substance produced by the body that gives hair, skin, and eyes their color.) So a team of researchers at the University of Bradford in the UK conducted a series of studies to understand the exact biological and chemical process. The main culprit for graying turns out to be an excess of hydrogen peroxide, naturally produced by hair cells.

Hair cells in people of all ages produce hydrogen peroxide. But in young people, it breaks down more quickly into its harmless elements: hydrogen and oxygen, thanks to the enzyme catalase. As we age, however, hair cells produce less and less catalase, and less hydrogen peroxide is able to break down.

Hydrogen peroxide acts as a bleach for melanin. Initially, the hair starts to turn gray, but over time, as the catalase level continues to decrease and the hydrogen peroxide level increases, the gray color gives way to white.
