Allnutrition Coconut oil is an oil that is commonly used in frying. Refining is a very complex process that involves the use of high temperature and chemicals – most often hexane. During refining (purification), tocopherols, polyphenolic compounds and sterols are partially removed. It is inferior in quality to unrefined, but its strong point is its versatility.
